Acetaia Leonardi is a family-run vinegar house in Modena, Italy, producing traditional balsamic vinegar following methods passed down since the 1800s. Using only cooked grape must from local Trebbiano and Lambrusco varieties, they age their balsamic in a series of wooden barrels β some more than a century old β to develop its deep, balanced sweetness.
