Fourme d’Ambert is one of France’s oldest blue cheeses, still made in the mountain caves of Auvergne. Cylindrical in shape and beautifully veined with blue mold, it offers a mild, creamy bite with soft mushroom notes and a gently savory finish. It’s aged for a minimum of 28 days, often longer, allowing its flavor to deepen while maintaining a buttery texture. This approachable blue pairs beautifully with pears, figs, and honey, or crumbled into salads and steaks.
