Aged Comté matured in the legendary Fort Saint Antoine cellars by Marcel Petite. These historic underground caves provide steady humidity and temperature year-round, allowing the wheels to age slowly and develop deep, layered flavor.
The paste is firm yet supple with a satin feel and tiny crystals throughout. Flavor opens nutty and buttery, then moves into notes of toasted hazelnut, caramel, and warm cream, finishing long and savory with that unmistakable Alpine sweetness Comté is known for.
