Pantaleo is a rare aged goat’s milk cheese from Sardegna, Italy, where fully aged goat cheeses are uncommon. Made from the milk of the native Capra Sarda goat, it’s aged for a minimum of 100 days, allowing the flavors to develop slowly and naturally.
Ivory in color with a pale rind, Pantaleo has a firm, hard texture and a surprisingly gentle profile. The flavor is full and lightly sweet with a clean, floral finish — so subtle that it almost doesn’t taste like a goat cheese at all.
