Swiss Chällerhocker Renaissance Cheese
$20.49 8 oz
A true alpine masterpiece. Chällerhocker (pronounced holler-hocker), meaning “sitting in the cellar,” is a washed-rind Alpine cheese from Tufertschwil, Switzerland. Crafted by cheesemaker Walter Räss with raw cow’s milk and aged over 10 months, it’s a bolder, more expressive take on Appenzeller-style cheeses. This small-batch “Renaissance” edition delivers an exceptional flavor profile: nutty, brothy, and rich, with hints of roasted hazelnuts, caramelized onions, and cultured butter. Its smooth, dense texture melts beautifully, making it ideal for fondue, gratins, or grilled cheese. Equally stunning served simply with crusty bread and pickles or paired with dry Riesling, malty lagers, or a funky farmhouse ale. A cult-favorite among mongers, chefs, and cheese lovers. Rustic, complex, and deeply satisfying.
Unpasteurized cow's milk, starter culture, salt, rennet/ cream level min 53% fat.
